A fragrant bowl of Soto Ayam
Soto Ayam is a warming Indonesian chicken soup filled with aromatic spices, tender shredded chicken and rice noodles.
Our version begins with chicken stock and a fragrant mixture of roasted coriander seeds, candlenuts and turmeric. Raw Base Genep adds another layer of traditional Balinese flavour.
The hot broth is poured over rice noodles, fresh cabbage and shredded chicken, then finished with toppings such as egg, celery leaves, fried shallots and fresh lime.

- • Chicken breast
- • Chicken bones, for making the broth
- • Raw Base Genep
- • Roasted coriander seeds
- • Roasted candlenuts
- • Roasted turmeric
- • Lemongrass, crushed
- • Bay leaves
- • Cooked rice noodles (bihun)
- • Boiled egg (optional)
- • Thinly sliced raw cabbage
- • Thinly sliced celery leaves (optional)
- • Lime wedges (optional)
- • Fried sliced shallots (optional)
- • Cooking oil
- • Water
Step by step
How to make Soto Ayam

Put the roasted coriander seeds, roasted candlenuts and roasted turmeric into a blender. Add a little water and blend until smooth.

Heat a little cooking oil in a large pot over medium heat.

Add the blended spices and cook, stirring regularly, until fragrant.

Add the crushed lemongrass.

Add the chicken breast and chicken bones. Stir well so the chicken is coated with the spices.

Add plenty of water, then add the raw Base Genep and bay leaves.

Turn the heat to high and cover the pot. Cook for about 45 minutes, or until the chicken is tender.

Remove the chicken breast from the broth and shred it into small pieces.

How to serve Soto Ayam
- 1. Prepare a serving bowl.
- 2. Add the cooked rice noodles (bihun), sliced raw cabbage, shredded chicken and boiled egg.
- 3. Pour the hot chicken soup over the ingredients.
- 4. Finish with celery leaves, fried shallots and a lime wedge if you like.
- 5. Serve immediately while hot.
