Chicken satay with peanut sauce

Sate Tusuk Ayam is made from pieces of marinated chicken threaded onto wooden skewers and grilled until golden brown.

The chicken is served with a rich homemade peanut sauce made with fried peanuts, shallots, garlic, candlenuts and palm sugar.

For a little extra sweetness, you can finish the dish with sweet soy sauce.

What you need

Ingredients

Chicken

  • Chicken breast
  • Wooden skewers

Marinade

  • Shallots
  • Garlic
  • Large red chilli
  • Coriander seeds
  • Fried candlenuts
  • Salt
  • Cooking oil

Peanut Sauce

  • Fried peanuts
  • Shallots, half-fried
  • Garlic, half-fried
  • Fried candlenuts
  • Palm sugar
  • Bay leaves
  • Cooking oil

Step by step

How to Make Sate Tusuk Ayam

    Cut the chicken breast into small cubes.

    Blend all the marinade ingredients with a little water until smooth.

  3. 3

    Add a little cooking oil and mix the marinade well with the chicken.

  4. 4

    Put the chicken in a covered container and let it rest while preparing the peanut sauce.

    Blend all the peanut sauce ingredients, except the bay leaves, with a little water until smooth.

    Heat a little cooking oil in a pan and add the blended peanut sauce.

    Add the bay leaves.

    Cook over low heat, stirring until the sauce starts to bubble.

    Taste and adjust the seasoning if needed.

    Thread 3 pieces of marinated chicken onto each wooden skewer.

    Grill over medium heat until the chicken is fully cooked and evenly browned.

    Serve with the peanut sauce. Add sweet soy sauce if desired.

Serving tip

Serve the chicken skewers hot with plenty of peanut sauce. Add sweet soy sauce if you like a sweeter finish.
