Satay with a Balinese twist
Sate Lilit Ayam is a Balinese-style chicken satay. Instead of threading pieces of meat onto a skewer, finely chopped seasoned chicken is wrapped around a lemongrass stalk or flat bamboo skewer.
The chicken is mixed with Base Genep, coconut milk, palm sugar and fragrant kaffir lime leaves before being shaped by hand.
Grilling gives the outside a delicious roasted flavour, while the coconut milk helps keep the chicken tender.
This is one of the traditional Balinese dishes you may learn to prepare during a cooking class at Oemah Tepi Sawah.

- • Chicken breast
- • Lemongrass stalks or flat bamboo skewers
- • Kaffir lime leaves
- • Palm sugar
- • Thick coconut milk
- • Fried Base Genep
- • Salt
Step by step
How to make Sate Lilit Ayam

Finely chop the chicken breast and palm sugar.

Add the fried Base Genep, finely sliced kaffir lime leaves, thick coconut milk and salt to the chicken.

Mix everything thoroughly until the seasoning is evenly distributed through the chicken.

Take a small amount of the mixture and press it firmly around a lemongrass stalk or flat bamboo skewer.

Repeat until all of the chicken mixture has been shaped onto the skewers.

Grill over medium heat, turning as needed, until the chicken is fully cooked.

Base Genep
One of the key ingredients in our Sate Lilit Ayam is Base Genep, the aromatic spice mixture that gives many Balinese dishes their distinctive flavour. For this recipe, we use fried Base Genep before mixing it with the chicken.
