Pandan net crepes with sweet coconut and palm sugar sauce
Traditional Indonesian sweet
Pandan crepes with a delicate net pattern
Roti Jala is made from a simple pandan batter cooked into a delicate net pattern and rolled while still warm.
Fresh pandan leaves give the batter its natural green colour and gentle aroma.
The rolled crepes are served with a creamy sauce made from coconut milk and palm sugar, lightly thickened with cornstarch.
It is another local sweet you may discover during our cooking class at Oemah Tepi Sawah.
Batter
What you need
- • Wheat flour
- • Water
- • Pandan leaves for natural colouring
- • Salt
You will also need
- • 15 cm non-stick pan
- • Squeeze bottle with a small hole
Coconut sauce
- • Coconut milk
- • Palm sugar
- • Salt
- • Cornstarch
Step by step
How to make Roti Jala
The pandan batter

Prepare the batter in the same way as Dadar Gulung, but make it slightly thicker.

Pour the batter into a squeeze bottle with a small opening.

Heat a 15 cm non-stick pan.

Squeeze the batter over the pan in a loose criss-cross pattern to create a thin net.

Cook until the batter is set, then remove it from the pan and gently roll it up.
Coconut sauce

Mix the cornstarch with a little water until smooth.

Add the coconut milk, palm sugar and a little salt to a pan.

Cook gently over low heat, stirring so the coconut milk does not catch.

Stir in the cornstarch mixture and continue cooking until the sauce gently thickens.
Pandan batter
Similar to Dadar Gulung
The batter begins much like our Dadar Gulung recipe, using fresh pandan for its green colour and aroma. For Roti Jala, however, the batter is made thicker so it can hold its distinctive net pattern.
