Godoh
Balinese fried banana, known across Indonesia as Pisang Goreng

Crispy fried banana
Godoh is the Balinese name for fried banana. Across Indonesia, the same much-loved snack is usually known as Pisang Goreng.
Ripe bananas are dipped in a simple flour batter and deep-fried until the outside is golden and crispy while the banana inside stays soft and sweet.
At Oemah Tepi Sawah we can make Godoh with rice flour for a gluten-free version, or combine rice flour with wheat flour for a slightly softer texture inside.
Fresh from the pan, it is especially good with a cup of Balinese coffee or tea.

- • A suitable variety of ripe banana
- • Water
- • Salt
- • Rice flour – for the gluten-free version
- • Rice flour and wheat flour – for the non-gluten-free version
- • Cooking oil, for deep-frying

Step by step
How to make Godoh

Mix the flour, water and salt to make a smooth batter.

For gluten-free Godoh, use only rice flour. For the non-gluten-free version, use 3 parts rice flour to 1 part wheat flour.

Add enough water to give the batter approximately the consistency of pancake batter.

Slice the ripe bananas in half, or cut them into the size and shape you prefer.

Dip each piece of banana into the batter until it is coated.

Carefully place the coated banana pieces into hot cooking oil.

Turn the pieces as needed and fry until golden brown and crispy.

Remove from the oil, allow the excess oil to drain and serve hot with coffee or tea.

Rice flour or wheat flour?
Rice flour gives Godoh its crispy texture.
Adding a little wheat flour keeps the outside crispy while making the inside of the coating softer. We use a ratio of 3 parts rice flour to 1 part wheat flour .
Using only wheat flour makes the coating too soft and causes it to absorb more oil.

Godoh or Pisang Goreng?
Godoh is the Balinese name for this snack. In Indonesian it is called Pisang Goreng .
Pisang Goreng is one of Indonesia's popular traditional snacks.
The bananas should be ripe, but not overly ripe, for the best result.
Very ripe bananas don't need to go to waste – they can be used for another traditional dessert called Lempang-Lempung.

Not every banana variety is suitable for Godoh. Local varieties commonly used include:

- • Pisang Terigu
- • Pisang Ketip – found only in Bali
- • Pisang Candi
