Indonesian vegetables with egg in a light savoury sauce

Fresh Vegetables, Simply Cooked
Capcay is a comforting Indonesian vegetable dish made with a colourful mixture of fresh vegetables, garlic and egg.
The vegetables are cooked only until tender while still keeping a little bite, then seasoned with sweet soy sauce, salty soy sauce, vegetarian oyster sauce and tomato sauce.
It is simple, warming and easy to adapt depending on which fresh vegetables are available.
This is the vegetarian Capcay we prepare at Oemah Tepi Sawah.
What You Need
Ingredients
- • Vegetables – carrot, cabbage, spring onion and optional corn kernels
- • Garlic, chopped
- • 1 egg
- • Cooking oil
- • Water
- • Sweet soy sauce
- • Salty soy sauce
- • Vegetarian oyster sauce
- • Tomato sauce
- • Salt
- • Pepper
Vegetarian
We use vegetarian oyster sauce when preparing this dish.
Step by Step
How to Make Capcay

Cut all the vegetables into bite-sized pieces.

Heat a little cooking oil in a pan over medium heat.

Once the oil is hot, add the chopped garlic and cook until lightly golden.

Add the egg and scramble it together with the garlic until it is about half cooked.

Pour in a little water and bring it to a boil.

Add the sliced carrots and cook until they are about half cooked.

Add the sweet soy sauce, salty soy sauce, vegetarian oyster sauce, tomato sauce, salt and pepper. Stir well.

Taste the broth and adjust the seasoning if needed.

Add the cabbage and spring onion. If you like, add some corn kernels too.

Cook for another 2–3 minutes, until the vegetables are tender but still slightly crisp.

Serve hot.
Dewi's Tip
Keep the Vegetables Slightly Crisp
Add the softer vegetables towards the end of cooking. Capcay is best when the vegetables are cooked through but still have a little bite.
